101 Ways to cook fish- time to catch up- Part 1

I have been falling behind on my quest to document 101 ways to cook fish. We have still been eating a great deal of fish here, at least 2 to 3 times a week in fact...and I am still coming up with new ways to prepare it so it doesn't get old. So I am dedicating this post to some of the wonderfully yummy dishes we tried in October and November of 2012...Yep, I am that far behind.
So now for ways 13,14,15, and 16

Salmon with Mustard and Brown Sugar Glaze

All the recipes I am showcasing today are quick and simple to prepare. This salmon dish is no exception.


3/4 cup white wine
1/4 cup butter
1 and 1/2 tsp Tony's seasoning ( a Cajun season salt)
1/3 cup spicy brown mustard
1/4 cup brown sugar
1 large salmon fillet
salt, pepper

Bring wine, butter, and Tony's seasoning to a boil in saucepan. Boil 3 minutes. 
Season salmon on both sides with salt and pepper. Place on a rimmed baking sheet and pour wine mixture over salmon.
Bake until salmon is opaque in center.
Remove salmon from oven.

Mix brown sugar and mustard in small bowl and spread over salmon fillet. Return to oven and broil 3-5  minutes until top is brown and bubbly.

Salmon and Artichoke Flat-breads

This is another quick and easy dish that I have made several times and we all enjoy.


Refrigerated pizza crust- I used Pillsbury brand
1 small salmon fillet- baked, flaked, and de-boned ( you could also used canned)
1 small jar marinated artichoke hearts
2 cups shredded mozzarella cheese
1 large tomato- diced
generous sprinkling of dried basil

Pre-heat oven to 400
Roll pizza crust out and cut into 4 sections. Roll each section into rounds. Place on foil lined baking sheets.  Divide salmon and marinated artichokes, and tomatoes between rounds. Sprinkle with dried basil.
Bake 10-12 minutes until cheese is bubbly


 Coconut Crusted Halibut


1/2 cup flour
2 eggs- lightly beaten
1/2 cup unsweetened shredded coconut
1/2 cup panko bread crumbs
generous sprinkle of dried parsley
1 TBS minced garlic
salt and pepper
2 small halibut fillets, skinned
3 TBS olive oil

Place flour in a shallow bowl.
Place eggs in another shallow bowl.
In a third shallow bowl, combine coconut, panko, parsley, garlic, salt and pepper.
Dredge halibut fillets in flour, then dip in egg. Place in coconut mixture and turn to coat entirely.
Heat oil in large frying pan over medium-high heat. Add halibut and cook about 4-5 minutes per side or until golden brown and opaque in center when cut.

I served this with an orange marmalade. I think it would be great with a mango salsa as well.



Tomato and Thyme Cod 

This is a delicious and easy dish that has become a staple in our house. It is a snap to make and is great for those nights where I just don't have it in me to cook a complicated dish.


2 tsp. olive oil
1 medium onion- chopped
1 can diced tomatoes
1 heaping tsp. brown sugar
generous sprinkles of dried thyme
1 TBS soy sauce
4 small cod fillets, or one large one cut into 3-4 pieces (which is what I did)

Saute onion in oil over medium heat until onion is tender and lightly browned. Stir in diced tomatoes, soy sauce, brown sugar, and thyme. Bring to a boil.
Simmer for 5 minutes and then slip cod into sauce. Cover and simmer for approximately 10 minutes or until cod flakes easily.

I hope you are enjoying trying some of these recipes. It is definitely a fun challange to come up with new ways to prepare our freezers full of cod, halibut, sea bass, and salmon.
