101 Ways to Cook Fish- #3: Orange/Coconut Glazed Salmon with Peach Salsa

Today I prepared another fish dish. LOL. Big surprise huh?
This dish turned out wonderful and we will definitely be making it again.

There are actually 2 parts to this recipe...the peach salsa and the seared salmon. I made the peach salsa a day ahead of time.

So without further ado...here is the recipe

Peach Salsa

2 firm ripe peaches- peeled and chopped
2 nectarines- peeled and chopped
1/3 cup diced red bell pepper
1/3 cup diced orange bell pepper
1/3 cup diced red onions
1/3 cup chopped green onions
1/3 cup chopped cilantro
1/2 jalapeno pepper- chopped with seeds removed
1 cup apricot preserves.

Stir together and refrigerate several hours.

Orange/Coconut Glazed Salmon

1 Large Salmon fillet
coarse sea salt
2 cups orange juice
1/2 cup coconut rum
2 tablespoons olive oil

Bring orange juice and coconut rum to a boil in a small sauce pan. Let boil until mixture is reduced to about 1/2 -1/4 cup.
Season salmon fillets with sea salt.  Heat oil in large frying pan. Add salmon season side down, cover and cook over med heat for 5 minutes. Turn salmon and cook 3 more minutes. Add orange/coconut mixture to pan and continue cooking 2 minutes longer.

Plate salmon and top with Peach Salsa
